- 16 oz cream cheese (softened)
- 1 cup cheddar cheese (shredded)
- 1/4 cup green onion (diced)
- 1 tablespoon ranch seasoning mix (dry)
- 1/3 cup pecans (chopped)
In a large bowl mix together cream cheese, shredded cheese, green onions, and dry ranch mix. I used the good old fashion method and mixed it with clean hands, but you can also use a mixer with a paddle attachment.
Once mixed shape your cheese ball into a ball.
On a plate add chopped pecans. Roll cheese ball onto crushed pecans.
Cover cheese ball and place in the fridge to chill. Serve with crackers or raw veggies and enjoy.
Storage: Wrap the cheese ball tightly in plastic wrap or keep it in an airtight container in the fridge for up to 5 days.
Make ahead: Mix and shape the cheese ball up to 2 days ahead, wrap it, and keep it in the fridge. Roll it in the pecans right before serving so they stay crunchy.
To freeze: Shape the cheese ball but don't roll it in the pecans. Wrap it tightly in plastic wrap, place it in a freezer bag, and freeze for up to 1 month. Thaw overnight in the fridge, then roll in the pecans and serve.
