- 1 pound ground beef
- 1 tablespoon oil
- 1 cup diced yellow onion
- 2 cups broccoli florets small florets
- 1 cup sugar snap peas
- 1 red bell pepper diced
- 1 cup shredded/matchbox carrots
- 1 tablespoon minced garlic
Sauce:
- 1 tablespoon corn starch
- 2 tablespoons water
- ¼ cup vegetable broth
- 3 tablespoons soy sauce
- ¼ cup honey
- 1 tablespoon toasted sesame oil
- 1/4 teaspoon ground ginger
- ¼ teaspoon crushed red pepper flakes
Cook and crumble ground beef. Drain fat as needed then remove beef from skillet and set aside.
In the same skillet, heat 1 tablespoon of oil. Add onion, broccoli, sugar snapped peas, bell peppers, and carrots. Cook for 5 minutes until tender and then add in garlic.
Meanwhile, whisk the sauce together. In a bowl whisk together corn starch and water. Add in all remaining sauce ingredients and whisk until combined.
Add ground beef back into the skillet with veggies and pour in sauce. Allow to cook for another 5 minutes until the sauce is thickened. Serve over rice and enjoy.
Storage and Reheating
Refrigerator
Store leftover Ground Beef Stir Fry in an airtight container in the refrigerator for up to 3–4 days.
If you're meal prepping, you can portion the stir fry and rice into individual containers for easy lunches.
Freezer
Allow the stir fry to cool completely, then transfer it to a freezer-safe container and freeze for up to 3 months. Keep in mind that some vegetables may have a softer texture after freezing and reheating.
Reheating
Reheat leftovers in a skillet over medium heat until warmed through. Add a splash of water or beef broth if the sauce has become too thick.
Individual portions can also be reheated in the microwave.
