- 16 oz elbow mac pasta
- 1 cup sliced dill pickles
- 1 cup Diced cheddar cheese
- ¼ cup minced onion
Sauce:
- ⅔ cup mayo
- ½ cup sour cream
- ⅓ cup pickle juice
- 2 tbsp fresh dill
- ¼ tsp salt (or to taste)
- ⅛ tsp pepper (or to taste)
- ⅛ tsp cayenne pepper (or to taste)
Cook pasta according to package directions. Drain and rinse with cold water.
In a large mixing bowl add mayo, sour cream, pickle, juice, dill, salt, pepper, and cayenne pepper. Whisk together.
Add cooked pasta to mixing bowl and mix. Then add in sliced dill pickles diced cheddar cheese and minced onion.
Chill in the fridge for 1 hour then serve and enjoy.
Can I make pickle pasta salad ahead of time?
Yes, this is actually even better after chilling for a few hours.
