The perfect summer treat. This Peach Cobbler is so simple to make and taste amazing. Make with fresh peaches and topped with a thick and crumbly cobbler topping.

Cobbler Filling:
- 5 large peaches (peeled and sliced)
- ¾ cup sugar
- ¼ teaspoon salt
Cobbler Topping:
- ½ cup butter (melted)
- ¾ cup sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
Preheat oven to 350 degrees. Prepare a 2-quart casserole dish with non-stick cooking spray and set aside.
Peel and slice peaches then place them in a mixing bowl. Mix your peaches with sugar and salt.
Add these peaches to the bottom of your prepared casserole dish.
In a separate mixing bowl mix together your melted butter, sugar, vanilla, flour, and baking powder. Mix until combined but don't over mix. Once just mixed spoon on top of your peaches.
Bake for 25-30 minutes. Remove from the oven and allow to cool for 15 minutes before serving.
How to Pick the Perfect Peach:
When shopping for peaches there are a few things to look at to make sure you are picky the right ones. With any fruit, the first indicator of good fruit is the color. Look for a peach that is bright in color without brown or green spots.
You can also feel is a peach is good by gently squeezing it. You want your peach to be soft without being mushy. A firm peach will still need some time to ripen.
How to Peel a Peach:
It can be tricky to peel a peach without losing much of the fruit and only removing the skin. I like to place them in boiling water for just about 10-15 seconds. Remove them from the water and place in ice to stop the cooking process. Once cool enough to handle you can gently use a knife to peel and the skin should come right off. Once peeled you can slice in half in remove the pit then slice for your cobbler.
How to Freeze Peach Cobbler:
To freeze this cobbler follow the directions below then when done cooking allow it to cool completely.
Once cooled seal well and then place in the freezer for up to 6 months.
When you are ready to serve allow it to thaw in the fridge overnight. Place in the oven to heat through.
