Chicken Fajita Bubble Up Bake
This Chicken Fajita Bubble Up Bake is a recipe full of flavor and simple to make. From start to finish you can have dinner on the table in less than an hour.
- 7.5 oz refrigerated biscuit dough
- 1 oz taco seasoning
- 1 tablespoon vegetable oil
- ½ cup green bell pepper (diced)
- ½ cup red bell pepper (diced)
- ½ cup onion (diced)
- 1 pound chicken breast (boneless and skinless)
- ½ cup water
- 2 cups colby jack cheese (shredded)
Preheat oven to 375 degrees F. Prepare a baking dish with non-stick cooking spray.
Dice each biscuits into quarters and place them in a mixing bowl. Sprinkle with 1 tablespoon of taco seasoning and toss to coat.
Heat oil on a skillet and add in diced bell peppers and onions. Cook until tender then remove from the skillet and set aside.
Dice chicken into bitesize pieces. In the same skillet add diced chicken and cook until it's cooked through and at a safe temperature.
Add the remaining taco seasoning along with water to the skillet with your chicken. Allow simmering until the sauce thickens.
Mix peppers and onions back into your skillet with other ingredients. Add this to the bottom of your casserole dish.
Top chicken and peppers with your seasoned biscuits pieces.
Bake for 20-25 minutes until your biscuits are cooked through and golden brown. Remove from the oven, top with cheese, and return to oven until cheese is melted. This should take no longer than 5-10 minutes. Once melted serve and enjoy.
