Chicken:
- 3 lb boneless skinless chicken breast
- ½ cup chicken broth
- ⅓ cup plus 2 tablespoons hoisin sauce
- 3 tablespoons ketchup
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 2 tbsp minced garlic
- 1 teaspoon red pepper flakes
- 1 tablespoon ground ginger
- 2 teaspoons toasted sesame oil
- buns for serving
Coleslaw:
- 4 cups coleslaw mix
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon red pepper flakes
Place chicken in the slow cooker. Add the remainder of the ingredients to the slow cooker.
Cook in low for 6 hours or on high for 4. Once cooked shredded in the slow cooker.
To prepare coleslaw place coleslaw mix in a mixing bowl.
In a separate bowl whisk together sugar with sesame oil and red pepper flakes. Pour over coleslaw mix and toss to coat.
Serve shredded chicken on buns with coleslaw. (tips for a creamy sauce add mayo)
- Tip: This coleslaw goes great with the flavors of this sandwich. You can add salt and pepper to taste. For a creamy coleslaw instead of oil base try using mayonnaise or greek yogurt.
