Thanksgiving Salad

This Thanksgiving Salad is a hearty green salad that goes perfect with Thanksgiving Dinner or any other night of the week! Loaded with Gala Apples, pomegranate arils, pecans and feta cheese drizzled with a homemade Honey Mustard dressing.

Ingredients

Salad:

  • 6 cups spring greens mix (or any salad blend)
  • 3 small gala apples (or your favorite apple)
  • 1/3 cup pomegranate arils
  • 2 oz feta cheese
  • 1/2 cup pecans (chopped)

Dressing:

  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tablespoons apple cider vinegar
  • 1 1/2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt (or to taste)
  • 1/8 teaspoon pepper (or to taste)

Instructions

  • Slice apples into thin slices. Add greens to a salad bowl and top with all salad ingredients.
  • To make your dressing pour all ingredients into a jar and shake to mix. Or place all ingredients into a bowl and whisk.
  • Serve salad and drizzle on dressing to taste.

Notes

Tips for a great Thanksgiving Salad:
  1. Use ingredients you love. Add things like dried cranberries, berries, nuts or whatever else you like to put in salads.
  2. A little dressing goes a long way. You don't need to use a lot of the dressing to cover the salad. A lighter dressing goes great with this salad.
  3. Do not add the dressing until you are ready to serve. When mixing the dressing with the salad you do not want the salad to get too soggy so mix it in when you are ready to eat it.
