  • 1 cup Flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1 tablespoon Sugar
  • 1 Egg
  • 1 cup Milk
  • 1 tablespoon Butter (melted)


  1. Preheat oven to 400 degrees F.
  2. Shift together flour, baking powder, baking soda, and sugar. In a separate bowl beat egg then add milk and melted butter. Now mix together wet and dry ingredients.
  3. Pour pancake mix into mini muffin pan and bake for 10-12 minutes. Remove from oven and allow to cool for 1-2 minutes.
  4. Optional: Serve with maple syrup.
