Ingredients

  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2/3 cup peanut butter
  • 2/3 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 cup milk
  • 1 cup peanut butter and chocolate chips

Instructions

  1. Preheat oven to 375 degrees F. Prepare a muffin tin with non-stick spray (or oil) and set aside.

  2. Sift together flour, salt, and baking powder.
  3. In a stand mixer (with paddle attachment) mix together peanut butter, butter, and brown sugar. Once well combined and smooth add eggs (one at a time) and milk. Continue to mix until well combined.
  4. Slowly mix in dry ingredients until just combined. Fold in peanut butter and chocolate chips with a spoon.
  5. Spoon mix into muffin tin. Bake for 15-20 minutes or until a toothpick can come out clean.
