Smooth and creamy Cheddar Ranch Mashed Potatoes
Place peeled and cubed potatoes in a large pot. Cover with water and allow to cook on medium/high until it reaches a boil. Reduce heat (medium) and cook until potatoes are tender. Drain water, turn off heat, and return to pot.
Add butter and milk and start mashing. Add cubed cream cheese and mash until melted and smooth. Add milk as needed to get the consistency you want.
Add all seasonings (ranch, pepper, salt, and garlic) and use a hand mixer to whip potatoes until smooth.
Fold in 1 cup of cheese until melted. Serve with topped with remaining shredded cheese and diced green onions.
