Chocolate Chip Oatmeal Muffins

  • 1 1/2 cup Old fashion dry oats
  • 2 2/3 cups All purpose flour
  • 2/3 cup Sugar
  • 2 tablespoons Baking powder
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1 1/2 cup Milk
  • 1/2 cup Vegetable oil
  • 1 cup Chocolate Chips


  1. Preheat oven to 400 degrees. Prepare a muffin tin with non stick cooking spray or muffin tin liners. 

  2. Whisk together oats, flour, sugar, baking powder, and salt in a large mixing bowl. In a separate bowl beat eggs then add it to other ingredients.

  3. Add milk and oil to the large mixing bowl with ingredients and mix until combined. Fold in chocolate chips. Allow the dough to sit for 30-35 minutes covered for oatmeal to soften. Spoon dough into each muffin tin about 3/4 way full. 

  4. Bake for 17-18 minutes or until muffins are cooked though and a toothpick can come out clean.
