This makes 8 1oz servings.
Prepare a baking sheet with parchment paper and set aside.
Melt white chocolate and mix in 1/8 teaspoon of peppermint extract. Then spread it onto the parchment paper. Place in the freezer to harden for 10 minutes (longer if needed). Once sold remove from freezer.
Melt chocolate chips and mix in 1/8 teaspoon of peppermint extract. Then spread it on top of your white chocolate. Top with peppermint chips and return to the freezer. Freeze again for at least 10 minutes or until your chocolate is hard.
Remove from freezer and paper and break into pieces to serve. Store them in an airtight container in the fridge or eat them right away.
