Rotisserie Chicken Tacos

Quick and easy Rotisserie Chicken Tacos made with homemade taco seasoning are the perfect Taco Tuesday dinner! Everyone will enjoy this perfectly seasoned and flavored rotisserie chicken for the tacos.

Ingredients
  

  • 3 cups Rotisserie chicken
  • nonstick cooking spray or oil
  • 2 tablespoons tomato paste
  • 1 cup hot water
  • 1 tablespoon lime juice
  • 12 taco shells

Seasoning:

  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon dried oregano

Optional toppings:

  • lettuce, tomatoes, salsa, shredded cheese, and/or sour cream.

Instructions
 

  • Mix all seasonings together and place in a small bowl and set aside.
  • Prepare a skillet with nonstick cooking spray or a small about of oil. Place shredded Rotisserie chicken into a skillet with seasoning. Add seasoning to taste you don't have to use all of it or you can add more to taste. Allow this to cook for 1 minutes.
  • Add tomato paste and hot water to skillet with chicken. Cook on medium/low while stirring until combined. Allow this to simmer for 3-4 minutes before removing from heat.
  • Add lime juice to chicken and serve in taco shells with desired optional toppings.
