How to make Rotisserie Chicken Tacos:

Start by shredding and cutting the rotisserie chicken into pieces that are good size for fitting into taco shells. Add your chicken to the skillet with the seasoning.

This is the same seasoning on use on my Homemade Chicken Taco Seasoning. Once the chicken and seasoning is mixed at the tomato paste and water to the skillet.

Mix it all together and heat it up. Squeeze some lime juice to finish it all up and make your tacos!

Ingredient Notes:

  • Rotisserie Chicken – Using rotisserie chicken makes this recipe quick and easy. Shred it while it’s still warm for the best texture.
  • Oil or Cooking Spray
  • Tomato Paste – Helps mix well with the seasoning.
  • Hot Water
  • Lime Juice
  • Taco Shells – for serving.

Seasoning:

You can use your favorite brand of Taco Seasoning or season the chicken yourself. I make a Homemade Taco Seasoning and keep it in my pantry. I used chili powder, ground cumin, salt, pepper, paprika, garlic powder, onion powder, red pepper flakes and dried oregano to make my homemade taco seasoning.

Optional toppings:

Top the tacos with your favorite taco toppings like lettuce, tomatoes, salsa, shredded cheese or sour cream.

Directions:

Step One – Mix all seasonings together and place in a small bowl and set aside.

Step Two – Prepare a skillet with nonstick cooking spray or a small about of oil. Place shredded Rotisserie chicken into a skillet with seasoning.

Add seasoning to taste you don’t have to use all of it or you can add more to taste. Allow this to cook for 1 minutes.

Step Three – Add tomato paste and hot water to skillet with chicken.

Cook on medium/low while stirring until combined. Allow this to simmer for 3-4 minutes before removing from heat.

Step Four – Add lime juice to chicken and serve in taco shells with desired optional toppings.

Ingredients 

  • 3 cups Rotisserie chicken
  • nonstick cooking spray or oil
  • 2 tablespoons tomato paste
  • 1 cup hot water
  • 1 tablespoon lime juice
  • 12 taco shells

Seasoning:

  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
