My favorite way make to rice. This Cilantro Lime Rice is a must for taco night and the perfect recipe for making favorite rice dish at home.

When I was pregnant with my 2nd baby all I wanted to eat was Chipotle, like all the time! Chipotle Cilantro Lime Rice was one of my must have items.
Those flavors were on my mind all the time and since Chipotle wasn’t open for breakfast I had to make my own at home.
This Cilantro Lime Rice is NOT an exact duplicate for Chipotle’s rice but it’s my favorite way to make it. It’s so simple and easy to make, your whole family will think you got it from the restaurant.

How to make Cilantro Lime Rice:
This rice is really simple to make. Cook your rice according to the instructions. Once the rice is done add your other ingredients and mix up.
Then you are ready to serve!

Ingredients Notes:
- Rice – You can use any rice you prefer, but I used Jasmine rice for this recipe.
- Salt
- Oil – I used vegetable oil, but any flavorless oil will work.
- Cilantro
- Lime Juice – Use a fresh lime for the best flavor.
What are Flavorless Oils?
Flavorless Oils are oils used in cooking that have no distinct flavor or aroma. These are good options below.
- Canola oil
- Corn oil
- Peanut oil
- Vegetable Oil

Directions:
Step One: First prepare rice according to directions.
Recipe Tip
Since some rice can take longer to cook or call for more water than others, I suggest to just look at your bag and follow those directions.

Step Two: Once your rice is cooked add salt, oil, chopped cilantro, and lime juice.
Stir together until well combined.

How Much Juice is on One Lime:
You should be able to get about 2 tablespoons of juice from one lime.
How to Juice a Lime:
To make sure you get the most juice from your lime you can try rolling it on the counter before slicing it.
You could even place it in the microwave for 10-15 seconds.

Once your lime is ready to be juiced start by cutting it in half. You can use a manual or electric juicer.
If you don’t have those tools, just use your hands or even a pair of tongs to squeeze out all the juice.
Do you use the stems of Cilantro?
I will chop all of the leaves of cilantro, but add a few stems. I will finely chop the stems as they have great flavor and it really adds to the rice.

How is this different from Mexican Rice?
Mexican Rice is a more aromatic and spicy rice than Cilantro Lime Rice. It is made with broth instead of water that builds the flavor profile.

What to serve the Cilantro Lime Rice with:

Cilantro Lime Rice
Ingredients
- 1 cup Jasmine rice
- 1 teaspoon Salt
- 1 tablespoon Oil
- 1 tablespoon Cilantro, (chopped)
- 2 tablespoons Lime juice, (fresh squeezed)
Instructions
- Prepare rice according to directions.
- When rice is cooked add salt, oil, chopped cilantro, and lime juice. Stir together until well combined.

Have not tried your Cilantro Rice yet, but it sure sounds yummy. Though you might be interested in another way to make a Mexican flavor type of rice that we love over here.
Prepare your rice as per your package direction then add sour cream and a one can of diced green chilies. Place in casserole dish top with the Mesican grated cheese, our favorite is Mexican blend, but cheddar is tasty as well.
Heat until cheese melts. The dish comes back empty at potlucks!
