These Air Fryer Vegetables are roasted perfectly and in half the time it takes to roast veggies in the oven. Use any veggies you like for this medley, but I specifically love bell peppers, red onions, broccoli, and zucchini.Â
My air fryer has become one of my favorite and most used kitchen tools. I love roasting and frying vegetables in it.
It is perfect for cooking veggies for side dishes and keeping them tasting the freshest. My kids even love air fryer vegetables the most.
This recipe for Air Fryer Vegetables is a medley of some of my favorite veggies in the air fryer.
You can use any variety of vegetables you want, and the time is still basically all the same.
Only thing that I would not recommend mixed in with these are potatoes as they do take a bit longer, but I have plenty of Air Fryer Potato recipes you can check out as well!
How to make Air Fryer Vegetables:
Start by washing and preparing your vegetables. Dice and chop them into bite-sized pieces for easy eating. Chop your onion into smaller pieces than everything else. Toss you veggies in some oil and then season them. Add them to the air fryer and cook. Serve hot right out of the air fryer.
Ingredients:
- Large Bell Pepper - Use any color you want, for this I used a red one.
- Medium Red Onion
- Broccoli - cut into florets.
- Zucchini
- Oil
- Dried Oregano
- Dried Parsley
- Salt
- Pepper
Directions:
Step One - Preheat air fryer to 350 degrees F.
Step Two - Diced veggies and place them into a mixing bowl.
Step Three - Add oil to veggies and toss to coat. Add in seasoning and again toss to coat.
Step Four - Place seasoned veggies into your air fryer basket in a single layer.
Step Five - Cook for 6 minutes then remove basket and shake.
- Cooking Tip: The shake just moves the veggies around and allows the heat to cook the veggies evenly throughout.
Step Six - Place basket back into air fryer and cook for an additional 3-5 minutes or until veggies are tender. Once cooked remove from air fryer basket and enjoy.
Why use the Air Fryer for vegetables?
An Air Fryer is a relatively newer kitchen tool. I just recently got on this past year, so they are also new to me using them!
Using an air fryer definitely has some added benefits to them then pan frying or roasting vegetables. You typically use less oil when Air Frying, so the calorie count is lower because of the less oil used.
Also, when using an air fryer for vegetables, a lot of the nutrients that are baked or cooked off when roasting or baking at a high heat for a long period of time are not lost in air frying.
