This Rotisserie Chicken Casserole is the perfect quick dinner recipe. Made with a juicy rotisserie chicken and topped with buttery Ritz crackers, everyone will love this casserole!

Using a rotisserie chicken for dinner is a great option for casseroles and soups.

This Rotisserie Chicken Casserole is a creamy, buttery casserole with a nice buttery Ritz Cracker crunch.

This casserole is really easy to make, since you have an already cooked chicken!

The rotisserie chicken is juicy and moist, which unfortunately baked chicken breasts sometimes are not as moist and juicy.

How to make Rotisserie Chicken Casserole:

Prep: Start by shredding and dicing the chicken. This should be easy but be careful to separate all the bones.

Mix the chicken with all the other ingredients except the crackers and butter. Crush the crackers in the packaging.

Spread the chicken in a casserole dish. Top with the crushed crackers and pour the melted butter on top of the crackers.

Cook: Bake in the oven and serve with some veggies, a salad, or another side you enjoy!

Ingredient Notes:

  • Rotisserie Chicken: you can use any cooked and shredded chicken
  • Cream of Chicken Soup
  • Sour Cream
  • Seasoning: onion powder, garlic powder, salt, and pepper.
  • Ritz Crackers: that have been crushed
  • Butter: unsalted and melted

Directions:

Step One – Pull apart Rotisserie chicken from bones and skin.

Shred chicken meat and set aside.

Step Two – Preheat your oven to 350 degrees F.

Prepare a 2 quart casserole dish with nonstick cooking spray and set aside.

Step Three – Mix Rotisserie chicken with cream of chicken soup, sour cream, and seasonings.

Add to the bottom of your prepared casserole dish.

Step Four – Top your casserole with crushed crackers and melted butter.

Step Five Place in the oven to bake for 20-30 minutes.

Remove from the oven, serve, and enjoy.

How to store this casserole:

Casserole needs to be stored in the refrigerator once baked.

Transfer it into an air-tight container or keep it in the casserole dish and cover it with plastic wrap.

It will last in the refrigerator for about 7 to 10 days.

Can you freeze this casserole:

Prep: Yes, you can freeze this casserole. Follow the directions and make the casserole as instructed. Once the casserole is done, allow it too fully cool.

Freeze: I find it best to cook it in one of my casserole dishes that have a lid.

Once the dish is cool, put the lid on it and freeze in the freezer. It will last up to 3 months in the freezer.

I think a good old-fashioned salad goes great with this dinner.

Ingredients 

  • 1 Rotisserie chicken
  • 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt, or to taste
  • teaspoon pepper, or to taste
  • 1 sleeve Ritz crackers, crushed
  • 6 tablespoons butter, melted

Instructions
