Ingredients

Filling:

  • 4 Cups Blueberries
  • Cup Sugar
  • 2 Teaspoons Cornstarch
  • ¼ Teaspoon Cinnamon
  • 1 Teaspoon Lemon Zest

Topping:

  • ½ Cup Butter Melted
  • ¾ Cup Sugar
  • 1 Teaspoon Vanilla
  • 1 Cup All Purpose Flour
  • 1 Teaspoon Baking Powder

Instructions

  • Preheat the oven to 350 degrees.
  • First prepare the filling by stirring the blueberries, sugar, cornstarch, cinnamon, and lemon zest together. 
  • Pour the blueberry mixture into a greased 8x8 casserole dish.
  • In a separate mixing bowl mix together your melted butter, sugar, vanilla, flour, and baking powder. Mix until combined but don't over mix. Once just mixed spoon on top of your blueberries.
  • Bake for 35-40 minutes. Remove from oven and allow to cool for 15 minutes before serving.

This is best when fresh, but leftovers can be stored in the fridge for up to 5 days. It is best stored in an air-tight container.
