Filling:
- 4 Cups Blueberries
- ⅓ Cup Sugar
- 2 Teaspoons Cornstarch
- ¼ Teaspoon Cinnamon
- 1 Teaspoon Lemon Zest
Topping:
- ½ Cup Butter Melted
- ¾ Cup Sugar
- 1 Teaspoon Vanilla
- 1 Cup All Purpose Flour
- 1 Teaspoon Baking Powder
Preheat the oven to 350 degrees.
First prepare the filling by stirring the blueberries, sugar, cornstarch, cinnamon, and lemon zest together.
Pour the blueberry mixture into a greased 8x8 casserole dish.
In a separate mixing bowl mix together your melted butter, sugar, vanilla, flour, and baking powder. Mix until combined but don't over mix. Once just mixed spoon on top of your blueberries.
Bake for 35-40 minutes. Remove from oven and allow to cool for 15 minutes before serving.
How to store a cobbler:
This is best when fresh, but leftovers can be stored in the fridge for up to 5 days. It is best stored in an air-tight container.
