Summertime is the perfect time for a cobbler. This Blueberry Cobbler is a great dessert for the summer. Use fresh or frozen blueberries with a great crumble crust. Everyone (except my husband) will love this! Yes, Chad does not like blueberries!
How to make a Blueberry Cobbler:
Blueberry Cobbler is really easy to make. Make the fruit filling and the crumble topping. Place the fruit filling in the bottom of a baking dish, and the spread the crumble topping on top. Bake and serve warm topped with ice cream.
What is a Cobbler:
A cobbler is traditionally made with a fruit base and then topped with a batter that closely resembles a biscuit or dumpling.
Ingredient Notes:
This recipe has two parts to make. You will make the fruit filling and the crumble topping then bake it.
Filling:
- Blueberries
- Sugar
- Cornstarch
- Cinnamon
- Lemon Zest
Topping:
- Butter, Melted
- Sugar
- Vanilla
- All-Purpose Flour
- Baking Powder
Directions:
Step One: Preheat the oven to 350 degrees.
Step Two: First prepare the filling by stirring the blueberries, sugar, cornstarch, cinnamon, and lemon zest together.
Step Three: Pour the blueberry mixture into a greased 8×8 casserole dish.
Recipe Tip
An 11×7 casserole pan can be used if you do not have an 8×8.
Step Four: In a separate mixing bowl mix together your melted butter, sugar, vanilla, flour, and baking powder.
Mix until combined but don’t over mix. Once just mixed spoon on top of your blueberries.
Step Five: Bake for 35-40 minutes. Remove from oven and allow to cool for 15 minutes before serving.
How to store a cobbler:
This is best when fresh, but leftovers can be stored in the fridge for up to 5 days. It is best stored in an air-tight container.
What to serve with Cobbler:
The best thing to serve with warm blueberry cobbler is vanilla ice cream. You can also serve it with whipped cream. Try my homemade whipped cream recipe.
How to Freeze Blueberry Cobbler:
To freeze this cobbler follow the directions below then when done cooking allow it to cool completely.
Once cooled seal well and then place in the freezer for up to 6 months.
When you are ready to serve allow it to thaw in the fridge overnight. Place in the oven to heat through.
