Cheddar Ranch Mashed Potatoes

These perfect Cheddar Ranch Mashed Potatoes are super creamy and smooth. They are a great side dish with your next steak or pork chop! Everyone will love them!

Ingredients

  • 3 pounds Russet potatoes
  • 4 tablespoons Butter
  • 1/4 cup Milk (more as needed)
  • 4 oz Cream cheese (cubed)
  • 1/2 oz Ranch seasoning
  • 1/2 teaspoon Pepper
  • 1/8 teaspoon Salt
  • 1/4 teaspoon Garlic powder
  • 1 1/2 cup Shredded cheddar cheese (divided)
  • 2 tablespoons Green onions (optional)

Instructions

  • Place peeled and cubed potatoes in a large pot. Cover with water and allow to cook on medium/high until it reaches a boil. Reduce heat (medium) and cook until potatoes are tender. Drain water, turn off heat, and return to pot. 
  • Add butter and milk and start mashing. Add cubed cream cheese and mash until melted and smooth. Add milk as needed to get the consistency you want. 
  • Add all seasonings (ranch, pepper, salt, and garlic) and use a hand mixer to whip potatoes until smooth. 
  • Last fold in cheese until melted. Serve with topped with diced green onions.
