- 1/2 teaspoon Olive oil
- 1/2 cup Onion (diced)
- 1 pound Italian ground sausage
- 4 cups Russet potatoes (peeled and diced - about 2 large potatoes)
- 1 cup Celery (diced)
- 1 tsp dried parsley
- 1 tsp dried basil
- 4 cups Chicken broth
- 1 cup Cheddar cheese (shredded)
- 1 cup Heavy cream
Heat oil in a skillet over medium/high heat. Sauté your onions then add in your ground sausage. Cook and crumble then drain fat as needed.
Add in diced potatoes, celery, seasoning, and chicken broth. Bring to a boil, reduce heat, cover, and cook for 15-20 minutes until potatoes are tender.
Remove from heat and add mix in shredded cheddar cheese and then heavy cream. Serve and enjoy!
