Chicken Tater Tot Casserole

Ingredients

  • 4 tablespoons unsalted butter
  • 1.5 pound chicken breast (skinless and boneless)
  • ½ tsp Onion powder
  • ¼ tsp Garlic powder
  • salt and pepper to taste
  • 10.5 oz cream of chicken soup (1 can)
  • 16 oz sour cream
  • 12 oz frozen mixed vegetables
  • 1 oz ranch seasoning
  • 2 cups Shredded cheddar cheese
  • 32 oz frozen tater tots

Instructions

  • Preheat oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray.
  • Melt butter in a large skillet over medium heat.
  • Dice chicken into bite-size pieces and add to the skillet. Season with onion powder, garlic powder, salt, and pepper. Cook until no longer pink, about 6-8 minutes.
  • In a large mixing bowl, combine the cooked chicken, cream of soup, sour cream, veggies, and ranch seasoning. Stir until well combined.
  • Add shredded cheddar cheese and mix again.
  • Transfer mixture to the prepared baking dish. Top evenly with tater tots. Bake for 40-45 minutes, until bubbly and tater tots are golden. Serve and enjoy!

Notes

Storage and Reheating
Fridge: Keep covered in the refrigerator for up to 7 days.
Freezer: Best frozen before the tater tot layer is added. Once ready to serve thaw the casserole and then add the frozen tater tots.
Reheating: Oven recommended to keep the tots crispy; microwave works but will soften the topping.
