- 2 large sweet potatoes
- 1 tablespoon oil
- 1 tablespoon brown sugar
- 1/4 teaspoon ground cinnamon
Preheat oven to 450 degrees F. Prepare a baking sheet with non-stick cooking spray or parchment paper.
Dice sweet potatoes into even bite-size pieces then place in a mixing bowl.
Toss potatoes in oil. Once coated in oil add in brown sugar and cinnamon. Once sweet potatoes are coated place them on your baking sheet.
Bake for 30-35 minutes or until the potatoes are tender.
- Tip: For a crispy potato make sure to spread out your potatoes on the baking sheet. Potatoes baked on top of one another will create steam and cause potatoes to become soggy.
- Tip: I usually serve these with roast turkey or chicken and a salad.
