Ingredients

instant rice
(uncooked)

Ritz Crackers
(crushed)

tablespoons
unsalted butter
(melted)
Instructions
Preheat the oven to 350 degrees. Prepare a casserole dish with nonstick cooking spray and set aside.
Cook rice according to package directions then set aside.
In a skillet heat 2 tablespoons unsalted butter on the stove top over medium / high heat.
Dice Chicken into bite size pieces and add to skillet to cook. Once the chicken is almost cooked add in diced onions.
Once chicken is cooked through and onions are tender add in cream cheese and cream of chicken soup. Cook until cream cheese is melted and creamy.
Season with garlic powder, onion powder, salt, and pepper. Mix in prepared rice then place all of this in the prepared casserole dish.
Crush Ritz crackers and place them on the casserole.
Pour on melted butter evenly over crackers.
Place in the oven to bake for 20-30 minutes. Remove from the oven and serve warm.

Tip:
I used a 2-quart casserole dish.
