Creamy Sausage Tortellini Soup

Ingredients

  • 1 pound Ground Italian sausage
  • 1/2 cup Onion (diced)
  • 2 ribs Celery (diced)
  • 1 cup Carrots (peeled and diced)
  • 1 tablespoon Minced garlic
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Pepper
  • 1 tablespoon Italian seasoning
  • 4 cups Chicken broth (low sodium)
  • 1/4 cup Flour
  • 1 1/2 cup Half and half
  • 19 oz Frozen cheese tortellini
  • 2 cup Fresh spinach (chopped)
  • 1 cup Milk

Instructions

  • Cook and crumble sausage on the stovetop. Drain fat and add to your slow cooker.
  • Add onions, celery, carrots, garlic, salt, pepper, Italian seasoning, and chicken broth into your slow cooker. Cook on high 4-5 hours or on low for 7-7 hours.
  • In a small mixing bowl whisk together flour and half and half. Add to the slow cooker along with cheese tortellini. Allow to cook for 45 more minutes.
  • Add spinach to soup and cook for 5-10 more minutes. Last, slowly add in milk until you get the consistency you desire. Serve and enjoy!
