It’s the time of year for soup!

Soup is one of my favorite types of foods and I love this one! Maybe it’s just all the different flavors in every bite or the warm comforting feeling that a big bowl of soup gives.

I could eat it for about every meal and this Creamy Sausage Tortellini Soup is a favorite of mine that you are going to have to try.

How to Make Creamy Sausage Tortellini Soup:

Start by cooking your ground sausage in a pan. While it is cooking, prep your vegetables. Once the sausage is cooked drain any excess fat from it and place it in the slow cooker.

Next add to the slow cooker the vegetables, seasonings and chicken broth. Cook in the slow cooker for 4-5 hours on high or 7 on low.

When you have about 45 minutes left, mix together the half and half and the flour.

Add that mixture and the tortellini to the slow cooker. The final step is to add the spinach with about 10 minutes left before serving. Once the spinach is softened it will be good to serve.

Ingredients Notes:

  • Ground Italian Sausage – We like Italian Sausage but try not to use a sweet or spicy flavored sausage.
  • Veggies – You will need diced onions, celery, carrots, and garlic.
  • Seasoning – I used Italian seasoning, salt, and pepper.
  • Chicken Broth – I used low sodium chicken broth.
  • Flour
  • Half and Half
  • Frozen Cheese Tortellini – use any brand you can find.
  • Fresh Spinach – chopped.
  • Milk

Directions:

Step One – Cook and crumble sausage on the stovetop.

Drain fat and add to your slow cooker.

Step Two – Add onions, celery, carrots, garlic, salt, pepper, Italian seasoning, and chicken broth into your slow cooker.

Cook on high 4-5 hours or on low for 7-7 hours.

Step Three – In a small mixing bowl whisk together flour and half and half.

Add to the slow cooker along with cheese tortellini.

Allow to cook for 45 more minutes.

Step Four – Add spinach to soup and cook for 5-10 more minutes.

Last, slowly add in milk until you get the consistency you desire. Serve and enjoy!

What to serve with this Easy Potato Soup Recipe:

My kids love this soup. We honestly can eat it by itself, but when I’m feeding my three hungry boys, I sometimes have to make something extra to fill them up.

I love making these Butter Swim Biscuits or Mini Cornbread to serve with any soup I make.

Can I make this soup on the stovetop?

Yes, you can make this soup on the stovetop. You will need to change a few of the steps up though.

The first few steps are the same, but you will only cook on the stovetop for about 45 minutes.

Bring all ingredients to a boil and allow to boil for about 10 minutes to ensure the vegetables are soft to eat.

Simmer on a low heat for about 30 more minutes. Near the end of the cook time, you will want to add the tortellini the same as if in a slow cooker.

Give them about 10 minutes to cook just like in the slow cooker. Finish off with the spinach.

Can I freeze this soup?

Yes, you can freeze this soup. It is very easy to do.

Once you have cooked the soup, take it off the heat and allow to fully cool. You do not want to put anything hot in a freezer container or bag and then freeze it.

It is very important it is fully cool, as the steam that will come off in the freeze could cause your container to pop.

Once cooled add to a freezer safe container or bag, and freeze. It should last for about 3 months.

  • 1 pound Ground Italian sausage
  • 1/2 cup Onion, (diced)
  • 2 ribs Celery, (diced)
  • 1 cup Carrots, (peeled and diced)
  • 1 tablespoon Minced garlic

  2. At the end, when you say add in mix, do you mean add in milk to desired consistency? Because milk isn’t mention in the instructions anywhere else.
