The BEST Potato Soup Recipe! This soup is simple to make and full of flavor. It’s my all-time favorite way to make potato soup and a recipe you will want to try. It goes great in a bread bowl topped with cheese, bacon bits, and some chives!
Potato Soup is one of my favorite soups to make. I know I say that about a lot of the soups I make, but this is a huge hit with the whole family. Even my pickiest eater loves this Potato Soup Recipe.
How to Make Potato Soup:
Prep: Start by preparing your potatoes. Wash them and then peel them. Once peeled you will dice them to small chunks.
Cook: You are going to boil the potatoes in the chicken broth until they are tender. Mash them up once tender, and then mix in your other ingredients.
Blend: Use an Immersion Blender to make it smooth and creamy. Top with some cheddar cheese, bacon bits, and chives and enjoy.
Ingredient Notes:
- Russet Potatoes: First washed and then peeled and diced.
- Onion: I used a yellow onion..
- Chicken Broth: I used a low sodium broth for this recipe.
- Salt & Pepper
- Half and Half: I buy this from the store but you can make it using half heavy cream and half milk.
- Sour Cream
- Butter: I used unsalted butter.
- Optional toppings: cheese, bacon, and green onions.
Directions:
Step One – Place peeled and diced and onions into a large pot and cover with chicken broth.
Allow to cook until potatoes are tender.
Step Two – Use a potato masher to start to mash potatoes.
Once potatoes are tender add in remaining ingredients in the order listed.
Step Three – For a thicker soup serve now.
For a creamy soup (like in the pictures) continue to mash or use an immersion blender.
Step Four – Serve topped with shredded cheddar cheese, cooked and crumbled bacon, and diced green onions.
What to serve with this Easy Potato Soup Recipe:
My kids love this soup. We honestly can eat it by itself, but when I’m feeding my three hungry boys, I sometimes have to make something extra to fill them up.
I love making these Butter Swim Biscuits or Mini Cornbread to serve with any soup I make.
Freezing Instructions:
Cook your soup according to the instructions given but leave out the noodles.
Allow it to cool completely before placing it in a freezer bag or airtight freezer container. Freeze for up to 3 months.
To reheat:
Thaw in the refrigerator first or place in a large pot with 1 cup of broth and allow to cook on low until melted and warmed through.
