The BEST Potato Soup Recipe! This soup is simple to make and full of flavor. It's my all-time favorite way to make potato soup and a recipe you will want to try. It goes great in a bread bowl topped with cheese, bacon bits, and some chives!

- 8 cups Russet potatoes (peeled and diced)
- 1/2 cup onion (diced)
- 32 oz chicken broth
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon pepper (or to taste)
- 1 1/2 cups half and half
- 1/2 cup sour cream
- 2 tablespoons butter
- Optional toppings: cheese, bacon, and green onion.
Place peeled and diced and onions into a large pot and cover with chicken broth. Allow to cook until potatoes are tender.
Use a potato masher to start to mash potatoes. Once potatoes are tender add in remaining ingredients in the order listen.
For a thicker soup serve now. For a creamy soup (like in the pictures) continue to mash or use an immersion blender.
Serve topped with shredded cheddar cheese, cooked and crumbled bacon, and diced green onions.
Freezing Instructions:
Cook your soup according to the instructions given.
Allow it to cool completely before placing it in a freezer bag.
Place in a large pot with 1 cup of broth and allow to cook on low until melted and warmed through.
