Fruit Pizza

Fruit Pizza is a great summer dessert. Made with a sugar cookie crust, cream cheese "sauce" and topped with fresh fruit this dessert will be a huge hit.

Ingredients

Crust:

  • 1 ½ Cup All Purpose Flour
  • ¼ Teaspoon Baking Soda
  • ¼ Teaspoon Baking Powder
  • ½ Cup Salted Butter Softened
  • ½ Cup Sugar
  • 1 Egg
  • ½ Teaspoon Vanilla

Topping:

  • 8 Ounces Cream Cheese Softened
  • ¼ Cup Powdered Sugar
  • ½ Teaspoon Vanilla

Filling:

  • ½ Cup Red Grapes Cut in Half
  • ½ Cup Strawberries Sliced
  • ½ Cup Blueberries
  • ½ Cup Kiwi Sliced
  • ½ Cup Mandarin Orange Slices
  • 2 Tablespoons Apple Jelly
  • 1 Tablespoon Water

Instructions

  • Preheat the oven to 375 degrees.
  • In a mixing bowl stir together the flour, baking soda, and baking powder.
  • Next in a large mixing bowl blend your butter and sugar together until light in color. Then add in the egg and vanilla. Continue to mix until smooth.
  • Slowly add in the flour mixture and mix until well combined.
  • Line a 12-inch pizza pan with parchment paper or foil. Then press or roll the dough until it covers the pan.
  • Bake for 10-15 minutes until done. Cool completely before topping.
  • To make the topping blend the cream cheese, vanilla, and powdered sugar together until smooth. Then spread onto your crust.
  • Spread your fruit out evenly over the cream cheese topping pressing the fruit into the cream cheese if necessary.
  • Stir together the jelly and water then microwave for 30 seconds and stir again. Brush Jelly glaze onto the fruit to add sweetness and a nice glossy sheen.
  • Cut into slices and enjoy!

Notes:
  1. If using canned mandarin oranges be sure to drain well before putting on the pizza.
  2. This can be made ahead, but wait to add the fruit and glaze until ready to serve.
  3. These are my favorite fruits to use but you can use any fruit you like, but I do not recommend fruits that have a high water content; such as watermelon.
  4. If you don’t have apple jelly any light colored jelly will work.
  5. This is best served fresh, but leftovers can be stored in the fridge for 3 days.
