Ingredients

  • 6 bell peppers
  • 2 cups white rice (dry)
  • 1 pound ground turkey
  • 16 oz crushed tomatoes
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups Mozzarella cheese (shredded)

Instructions

  • Prepare your rice to the package directions and set aside.
  • Preheat oven to 375 degrees F. Prepare a baking dish with non-stick cooking spray and set aside.
  • In a skillet cook and crumble ground turkey.
  • To your skillet add in crushed tomatoes, Italian seasoning, onion powder, garlic powder, salt, and pepper. Add more seasoning to taste. Allow to simmer for 5-8 minutes on low then add in rice and mix together well.
  • Cut bell peppers and place in a baking dish. Spoon in ground turkey and rice mixture into each bell pepper then sprinkle on shredded cheese.
  • Bake for 34-40 minutes. Serve and enjoy!
