Halloween Cookie Bars

These Halloween Cookie Bars are perfect for that spooky party! Halloween is not only a time for candy! Homemade treats are a great idea for any Halloween party!

Ingredients

Cookie Bar

  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 2 tablespoon milk
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Frosting

  • ½ cup unsalted butter (softened)
  • ½ teaspoon pure vanilla extract
  • 6 tablespoon heavy cream
  • ¼ teaspoon salt
  • 4 cups powdered sugar
  • orange gel food coloring
  • halloween sprinkles

Instructions

Cookie Bar:

  • Preheat oven to 375 degrees. Prepare a 9x13 baking dish with nonstick cooking spray and set aside.
  • Beat softened butter, brown sugar, and white sugar with an electric mixer until light and fluffy.
  • Next add in your egg, vanilla extract, and milk. Mix until well combined.
  • In a separate bowl whisk together your flour, cocoa, baking powder, and salt.
  • Slowly add mix your dry ingredients into your wet. Stopping to scrap the sides as need until ingredients are combined.
  • Spread batter into your prepared dish. Bake for 12-15 minutes or until cooked though and a fork could be inserted and come out clean. Allow cookies to cool before frosting.

Frosting:

  • Beat butter with an electric mixer until light and fluffy. Add in vanilla, salt, and cream. Continue to mix until well combined.
  • Slowly add in powder sugar mixing constantly until well combined and fluffy.
  • Add in a few drops of orange gel food coloring until you get the desired color.
  • Spread frosting onto cooled cookie bars and top with festive sprinkles.
  • Cut into squares and serve. Store leftovers in an airtight container.

Notes

  • Tip: Make sure cookie bars are completely cooled before frosting so the frosting does not melt.
