Marry Me Chicken

Ingredients

  • 2 Pounds Chicken Breast (3-4 pieces)
  • Salt and Pepper (to taste)
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • 3 Teaspoons Minced Garlic
  • 1 Tablespoon All Purpose Flour
  • ½ Cup Chicken Broth
  • 1 Cup Heavy Cream
  • ½ Cup Grated Parmasan
  • Cup Sundried Tomatoes (rough chopped)
  • 1 Teaspoon Italian Seasoning
  • ¼ Teaspoon Red Pepper Flakes
  • ¼ cup Fresh Basil (chopped)

Instructions

  • Sprinkle chicken, on all sides, with salt and pepper to taste.
  • Melt butter and olive oil in a pan over medium high heat. Brown the chicken for about two minutes on each side. You may need to do this in batches; do not overcrowd the pan.
  • Then remove the chicken from the pan. Add the garlic and cook for 1-2 minutes until fragrant.
  • Add the flour to the pan stirring to absorb the oils.
  • Next add the chicken broth; stir to remove any lumps and scrape the bottom of the pan to get up any brown bits. Then add the heavy cream, tomatoes, Italian seasoning, pepper flakes, and parmesan cheese. Cook for a few more minutes stirring until the cheese is just melted.
  • Reduce the to low and add the chicken back to the pan. Cover and cook for 10-15 min or until the chicken is cooked through. To keep from burning, flip the chicken and stir the sauce halfway through.
  • When the chicken is cooked through, remove from heat and sprinkle with basil and serve.
