Million Dollar Chicken Casserole

Ingredients

  • 1 10.5 Ounce Cream of Chicken Soup
  • 1 Cup Cottage Cheese
  • 4 Ounces Cream Cheese (softened)
  • ½ Cup Sour Cream
  • 1 Teaspoon Cajun Seasoning
  • ½ Teaspoon Onion Powder
  • 4-4 ½ Cups Rotisserie Chicken (shredded in large chunks)
  • ½ Cups Bacon Bits
  • 1 ½ Cup Ritz Crackers (crushed)
  • ¼ Cup Butter (melted)

Instructions

  • Preheat the oven to 350 degrees and grease a 9x13 casserole pan.
  • Mix together the chicken soup, cottage cheese, cream cheese, sour cream, and seasonings. Once combined, stir in the chicken and set aside.
  • Next, in a small bowl stir together the cracker crumbs and butter, until the crumbs are completely covered.
  • Pour the chicken mixture into the casserole pan and spread evenly. 
  • Sprinkle the bacon bits over the top and then sprinkle over the cracker mixture.
  • Bake for 30-35 minutes until the edges are slightly browned and the middle is warm and bubbly.

Notes

Can you make this recipe ahead of time?
This recipe can easily be made ahead of time and then refrigerated or frozen. Follow all the directions except adding the Ritz Cracker topping. Make it in a casserole dish that has a sealable lid so you can freeze it or keep it in the refrigerator.
If cooking from the refrigerator, bring to room temp before baking. If cooking from frozen, thaw the casserole overnight in the fridge then cover with foil and bake.
