- 1 tablespoon olive oil
- 1 small onion (peeled and finely diced)
- 2 large carrots (peeled and diced)
- 2 stalks celery (diced)
- 3 cloves garlic (finely diced or minced)
- 4 cups vegetable stock
- 3/4 cup dried short pasta
- 1 can white beans (drained and rinsed)
- 1 can diced tomatoes
- 1 cup chopped green beans
- 2 teaspoons Italian seasoning
- Salt and pepper (to taste)
- 1/4 cup chopped fresh parsley (optional for garnishing)
- 1/4 cup shaved parmesan cheese (optional for garnishing)
Heat the olive oil in a pot over a medium-high heat. Add in your diced onion, carrots and celery and cook, stirring often, for 3-5 minutes or until softened.
Add garlic to your pot and cook, stirring, for 1 minute or until fragrant.
Add the vegetable stock, pasta, white beans, diced tomatoes, green beans and Italian seasoning to your pot. Bring to a boil, then reduce to a simmer and cook, stirring, for 10 minutes or until the pasta is just tender.
Season to taste with salt and pepper.
Serve topped with optional garnish and enjoy.
Storage Tips:
Store this soup in an airtight container in the fridge for up to 3 days. Reheat until hot using the stovetop or microwave.
This soup can be frozen. Freeze in an airtight container for up to 3 months. Thaw in the fridge overnight before reheating according to the above directions.
