Minestrone is a classic Italian Soup that is hearty and full of tasty ingredients. A classic Minestrone Soup is a vegetarian dish that is loaded with veggies and pasta.
This recipe for Minestrone is amazing! This is a classic Italian soup that has been served for generations.
It’s hearty and full of great ingredients from carrots, celery, onions, green beans, beans and small pasta!
Families have loved this for generations and I know your family will love it too.
How to make Minestrone:
Start by preparing your veggies by washing them and then cutting and dicing them to small bite-size pieces.
Once the veggies are soft add in the garlic. Cook for about a minute then add in all the remaining ingredients. Bring to a boil then simmer for 10 minutes.
Ingredient Notes:
Olive Oil – Use a good quality extra virgin olive oil. Vegetable oil will also be ok to use.
Onion – A yellow or white onion will work. Diced to small bites.
Carrots – The carrots can be left unpeeled if preferred.
Celery Sticks – Dice the celery to the size you prefer. You can go thin or thick with the celery pieces.
Garlic – The garlic cloves can be substituted with 3 heaped teaspoons of Minced Garlic.
Vegetable Stock – The vegetable stock (or broth) can be substituted with chicken or beef stock for a different flavor profile, but it will not be vegetarian then.
Pasta – Use a short variety of dried pasta. Ditalini was used in this recipe, but macaroni works great too!
White beans – The white beans can be substituted with your preferred variety of canned beans. Make sure to drain and rinse them.
Diced Tomatoes – The can of diced tomatoes can be substituted with a can of crushed tomatoes.
Green Beans – Use fresh or frozen green beans for this recipe.
Italian Seasoning – Use a store-bought Italian seasoning, or your own homemade version.
Salt and pepper – Season the soup with salt and pepper to suit your personal tastes.
Fresh Parsley (For Garnish)– The fresh parsley is optional and can be omitted if preferred.
Parmesan Cheese (For Topping)– The shaved parmesan is optional and can be omitted if preferred.
Directions:
Step One – Heat the olive oil in a pot over a medium-high heat. Add in your diced onion, carrots and celery and cook, stirring often, for 3-5 minutes or until softened.
Step Two – Add garlic to your pot and cook, stirring, for 1 minute or until fragrant.
Step Three – Add the vegetable stock, pasta, white beans, diced tomatoes, green beans and Italian seasoning to your pot.
Bring to a boil, then reduce to a simmer and cook, stirring, for 10 minutes or until the pasta is just tender.
Step Four – Season to taste with salt and pepper.
Step Four – Serve topped with optional garnish and enjoy.

Storage Tips:
Store this soup in an airtight container in the fridge for up to 3 days. Reheat until hot using the stovetop or microwave.
This soup can be frozen. Freeze in an airtight container for up to 3 months. Thaw in the fridge overnight before reheating according to the above directions.

Ingredients

- 1 small onion, (peeled and finely diced)
- 2 large carrots, (peeled and diced)
- 2 stalks celery, (diced)
- 3 cloves garlic, (finely diced or minced)
- 4 cups vegetable stock
- 3/4 cup dried short pasta
- 1 can white beans, (drained and rinsed)
- 1 can diced tomatoes
- 1 cup chopped green beans
- 2 teaspoons Italian seasoning
- Salt and pepper, (to taste)
- 1/4 cup chopped fresh parsley, (optional for garnishing)
- 1/4 cup shaved parmesan cheese, (optional for garnishing)
Instructions
