Ingredients

Homemade Granola:

  • 1/2 Cup Honey
  • 2 Tablespoons Oil
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Lemon Zest
  • 1 Teaspoon Vanilla
  • 1/4 Teaspoon Salt
  • 2 Cups Old Fashioned Rolled Oats
  • 1/2 Cup Pecans (rough chopped)

Parfait:

  • 3 Cups Vanilla Yogurt
  • 1 Cup Blueberries
  • 1 Cup Sliced Strawberries
  • 2 Cups Homemade Granola
  • Honey for Drizzling

Instructions

  •  Line a baking sheet with parchment paper and preheat the oven to 300 degrees.
  • Mix together honey, oil, cinnamon, lemon zest, vanilla, and salt.
  • Add the oats and pecans to the honey mixture.
  • Stir until all of the oats are coated; making sure there are no dry oats. Spread the oat mixture on the baking sheet in a thin even layer.
  •  Bake for 20-30 minutes stirring halfway through. Oats should be golden brown. Cool for 30 minutes and then crumble.
  •  Layer ingredients in a dessert cup. Start with yogurt then add berries. Then begin again with another layer of yogurt.
  • Repeat steps until the cup is full, ending with yogurt. Top with a little granola and fruit and a drizzle of honey. Serve and enjoy
