Line a baking sheet with parchment paper and preheat the oven to 300 degrees.
Mix together honey, oil, cinnamon, lemon zest, vanilla, and salt.
Add the oats and pecans to the honey mixture.
Stir until all of the oats are coated; making sure there are no dry oats. Spread the oat mixture on the baking sheet in a thin even layer.
Bake for 20-30 minutes stirring halfway through. Oats should be golden brown. Cool for 30 minutes and then crumble.
Layer ingredients in a dessert cup. Start with yogurt then add berries. Then begin again with another layer of yogurt.
Repeat steps until the cup is full, ending with yogurt. Top with a little granola and fruit and a drizzle of honey. Serve and enjoy
