Let’s start the day with a healthy breakfast. This Classic Yogurt Parfait is made with a homemade granola and is a great way to start the day!

When the New Year rolls around everyone has their resolutions. Healthier living is probably the most popular resolution.

Well, starting your day off with a healthy breakfast is a great way to keep that resolution. This Yogurt Parfait is a perfect choice for a healthy breakfast.

How to make a Yogurt Parfait:

Start baking preparing and baking your Homemade Granola. This is the longest part of making the parfaits, so you can make this the night before you plan on serving the parfaits for breakfast.

When you have the granola ready, build your parfaits in cups or a bowl. Put a layer of yogurt then fruit and then granola.

Two layers like this is enough to fill the cups and have a great breakfast.

Ingredient Notes:

Homemade Granola:

  • Oil – I used canola oil for the granola, but any neutral flavored oil will work.
  • Honey – sweetens the granola.
  • Cinnamon
  • Lemon Zest
  • Vanilla
  • Salt
  • Old Fashioned Rolled Oats – I would suggest you not use Quick Oats for this recipe.
  • Pecans – use chopped pecans for smaller bites.

Parfait:

  • Vanilla Yogurt – Use regular yogurt or Greek yogurt.
  • Blueberries – fresh blueberries are great on top.
  • Strawberries – sliced strawberries are a staple for a parfait.
  • Homemade Granola
  • Honey for Drizzling – adds a little extra sweetness to the parfait.

Directions:

Step One: Line a baking sheet with parchment paper and preheat the oven to 300 degrees.

Step Two: Mix together honey, oil, cinnamon, lemon zest, vanilla, and salt.

Step Three: Add the oats and pecans to the honey mixture.

Step Four: Stir until all of the oats are coated; making sure there are no dry oats. Spread the oat mixture on the baking sheet in a thin even layer.

Step Five: Bake for 20-30 minutes stirring halfway through.

Oats should be golden brown. Cool for 30 minutes and then crumble.

Recipe Tip

Store granola in a closed container at room temperature for up to one month.

Step six: Layer ingredients in a dessert cup.

Start with yogurt then add berries then some granola. Then begin again with another layer of yogurt.

Step Seven: Repeat steps until the cup is full, ending with yogurt.

Top with a little granola and fruit and a drizzle of honey. Serve and enjoy

Recipe Tip

Each dessert cup contains about 1⁄2 cup yogurt, 1⁄3 cup granola, and 1⁄3 cup fruit.

How to serve the Yogurt Parfaits:

I recommend making these up when you are ready to serve them.

The granola will get soggy if allowed to sit in the parfait for too long.

How to store the Parfaits:

The granola can be stored in an airtight container at room temperature for up to one month.

Keep the fresh fruit stored separately in airtight containers until ready to build a parfait.

Keep the yogurt in its container as well until ready.

The parfait can be refrigerated once assembled, but I do not recommend it as the granola gets soggy.
