Parsley Potatoes

Ingredients

  • 3 pounds Yellow Potatoes (Diced into 1 inch pieces)
  • 1 tablespoon Salt
  • 1/2 teaspoon Garlic Powder
  • 1/2 cup Butter
  • 1/3 cup Parsley (chopped)

Instructions

  • Bring a large pot 3⁄4 full of water to a boil.
  • Stir in salt and garlic powder then add potatoes.
  • Boil potatoes for 10-15 minutes; until they are fork tender.
  • Using a colander, drain potatoes and set aside.
  • Return the empty pot to the stove, add the butter and melt.
  • Once the butter is melted remove the pot from the heat and add the potatoes and parsley. Stir gently until the potatoes are coated in parsley and butter.
