Potatoes make the best side dish to any entree! These Parsley Potatoes are made with just 5 ingredients, and they are super easy to make.
Potatoes are one of the most popular side dishes to serve with dinner. They can be made a variety of ways, but they easy to make Parsley Potatoes are light and full of flavor.
These potatoes are easy to make and go great with chicken, beef or pork.
How to make Parsley Potatoes:
Start by washing and prepping your potatoes. Boil them for about 10-15 minutes. Drain in a colander and set aside. In the large pot melt your butter.
Once the butter is melted, remove the pot from the heat and add the potatoes back in with the parsley.
Gentle stir and fold the potatoes and parsley in with the melted butter. Be careful not to mash the potatoes when mixing.
Ingredients:
- Yellow Potatoes: That have been diced into 1 Inch Pieces. You can also use other starchy potatoes, such as red potatoes or fingerling potatoes.
- Seasoning: I used salt and garlic powder.
- Butter
- Parsley: I used flat leaf parsley for this recipe, but curly will work as well.
Directions:
Step One – Bring a large pot 3⁄4 full of water to a boil.
Step Two – Stir in salt and garlic powder then add potatoes.
Recipe Tip
When dicing potatoes try to get them as uniform as possible so that they cook evenly.
Step Three – Boil potatoes for 10-15 minutes; until they are tender to touch with a fork.
Step Four – Using a colander, drain potatoes and set aside.
Step Five – Return the empty pot to the stove, add the butter and melt.
Step Six – Once the butter is melted remove the pot from the heat and add the potatoes and parsley. Stir gently until the potatoes are coated in parsley and butter.
Recipe Tip
If you over cook the potatoes, they will be very crumbly and more like mashed potatoes. But don’t worry they still taste great.
How to store leftovers:
Leftovers can be stored in the fridge for up to 5 days. Store in an airtight container.
I do not recommend freezing these potatoes once they have been cooked. They tend to get mushy once thawed to reheat.

Ingredients
- 3 pounds Yellow Potatoes, (Diced into 1 inch pieces)
- 1 tablespoon Salt
- 1/2 teaspoon Garlic Powder
- 1/2 cup Butter
- 1/3 cup Parsley, (chopped)
