Peppermint Cream Cheese Frosted Brownies

I love peppermint at Christmas time. These Peppermint Cream Cheese Frosted Brownies are full of flavor and one of my favorite treats.

Ingredients

Brownies:

  • 1/3 cup unsalted butter (melted)
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon peppermint extract
  • 1/2 cup semi-sweet chocolate chips (melted)
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 cup semi-sweet chocolate chips

Frosting:

  • 8 oz cream cheese (softened)
  • 8 tablespoons unsalted butter (softened)
  • 1/4 teaspoon peppermint extract
  • 3 cups powdered sugar
  • 1/2 cup crushed peppermint

Instructions

Brownies:

  • Preheat your oven to 350 degrees. Prepare a 9x9 baking dish with parchment paper and set aside.
  • In a stand mixer or with a hand electric mixer beat your butter and sugar until creamy.
  • Add in your eggs one at a time then add your vanilla and peppermint extract.
  • Add melted chocolate chips and mix again until well combined. 
  • Mix in flour then cocoa powder until combined.
  • Last fold in chocolate chips then place in your prepared baking dish.
  • Bake for 30 minutes. Remove from the oven and allow to cool for 30 minutes before topping with cream cheese and serving.

Frosting:

  • Cream together cream cheese and butter in a stand mixer or with an electric mixer.
  • Once your cream cheese and butter is well combined and creamy add in sugar and peppermint extract and then continue to beat until your frosting is creamy and smooth.
  • Top cooled browies with cream cheese frosing and then sprinkle on crushed peppermint.
