Ingredients

  • 2 ½ pounds chicken tenders
  • 1 cup Ritz crackers (crushed)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • teaspoon pepper
  • 2 large eggs
  • 4 tablespoons butter melted

Instructions

  • Preheat oven to 375 degrees F. Prepare a baking sheet with nonstick cooking spray and set aside.
  • In a large shallow bowl mix ritz crackers with garlic powder, onion powder, salt, and pepper.
  • In a separate shallow bowl whisk eggs.
  • Place chicken tenders in egg and allow excess to drip off.
  • Then add chicken tenders to your seasoned crackers. Once coated place in your prepared dish. Repeat with each chicken breast.
  • Brush each chicken with melted butter.
  • Bake for 30-35 minutes or until chicken is cooked through.

Notes

Tip: You can also use a small amount of oil instead of butter. You want to brush your chicken tenders to make sure everything is moist and your breading does not become dry.

Other Cooking Directions:

Since this recipe became such a hit with our family we tried it in several different ways. You can also make it with chicken breast. To try that recipe check out my recipe for Ritz Cracker Chicken Breast.
