- 3 tablespoons butter (melted)
- 1/2 tablespoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (or to taste)
- 3 medium russet potatoes
- 5 boneless pork chops
- 2 large eggs
- 1/2 cup flour
- 1/2 cup panko bread crumbs
- 1/4 cup grated parmesan cheese
- 1/2 tablespoon Italian seasoning
Preheat oven to 425 degrees F. Prepare a baking sheet with nonstick cooking spray.
Mix melted butter with 1/2 tablespoon Italian seasoning, garlic powder, and salt.
Wash and dice potatoes even bite size pieces. Pour butter mixture over potatoes and toss to coat.
Place potatoes on your prepared baking sheet and bake for 15 minutes.
Mean while prepare your pork chops. In three separate bowl prepare 1. whisked egg 2. flour 3. breadcrumbs with grated parmesan cheese and Italian seasoning.
Dip your pork chop in flour, then egg, then breadcrumb mixture. (tip to keep from drying out brush or spray with oil)
Remove baking sheet with potatoes from the oven. Place pork chops in the baking sheet.
Bake for 10 more then flip the pork chops and bake an additional 10 minutes or until pork chops are cooked through and potatoes are roasted and tender.
