If you need a simple dinner with easy cleanup, this Sheet Pan Pork Chops and Potatoes is one of my favorite recipes to make. Everything cooks together on one pan, making it perfect for busy weeknights when you want a homemade meal without a sink full of dishes.

This is the kind of dinner I come back to again and again because it’s easy, filling, and made with ingredients I usually already have on hand. The pork chops turn out tender, the potatoes get perfectly roasted, and the whole meal comes together with very little effort.

Whether you’re looking for an easy sheet pan dinner, a family-friendly pork chop recipe, or a simple weeknight meal, this is one of those recipes you’ll want to keep in your regular dinner rotation.

How to make Sheet Pan Pork Chops and Potatoes:

ingredients for the Pork and Potatoes.

Ingredient Notes:

  • Butter – Helps the potatoes roast and keeps everything from drying out.
  • Seasoning – I used Italian seasoning, garlic powder, and salt.
  • Russet Potatoes – cut into bite-sized pieces.
  • Boneless Pork Chops – Boneless pork chops cook quickly and work great for sheet pan meals. If using thicker pork chops, you may need to add a few extra minutes of cooking time.
  • Eggs
  • Flour
  • Panko Breadcrumbs – Panko breadcrumbs are larger and flakier than regular breadcrumbs, giving pork a lighter, crispier crust.
  • Grated Parmesan Cheese

egg wash, flour and spices for the pork chops.

Step Six – Dip your pork chop in flour, then egg, then breadcrumb mixture.

Recipe Tip

I always coat my pork chops in flour first before dipping them in egg and breadcrumbs because the flour helps the egg stick evenly to the meat. If you skip the flour, the egg can slide right off the pork chop and the breadcrumb coating won’t stick as well. The flour creates a dry base that helps everything hold together better, giving you a crispier, more even breading that stays on while cooking. It also helps lock in moisture while the pork chops cook so they stay tender and juicy inside instead of drying out.

Step Seven – Remove baking sheet with potatoes from the oven. Place pork chops in the baking sheet.

Step Eight – Bake for 10 more then flip the pork chops and bake an additional 10 minutes or until pork chops are cooked through and potatoes are roasted and tender.

Recipe Tip

Cooking time can vary depending on the thickness and cut of your pork chops. I cook my boneless pork chops for about 10 minutes per side, which is usually perfect for thinner cuts. If you are using thicker pork chops or bone-in pork chops, they may need additional cooking time. The best way to know they are done is to use a meat thermometer and cook pork to at least an internal temperature of 145°F before serving.

Tips for Best Results

  • Cut potatoes into similar-sized pieces so they cook evenly.
  • Use a meat thermometer to avoid overcooking the pork chops.
  • For extra crispy potatoes, spread them in a single layer on the pan.
  • Let the pork chops rest before serving to help keep them juicy.
