Slow Cooker Chicken Fajitas

Planning meals every night when life is so busy sometimes can be very last minute. That is why I LOVE to use my Slow Cooker. These Slow Cooker Chicken Fajitas are super easy to make, and you can get them in the slow cooker before you day gets away from you! Taco Tuesday can be saved with preparing these Chicken Fajitas ahead of time!

Ingredients

  • 3 large chicken breast (boneless and skinless)
  • 3 large bell peppers (sliced)
  • 1 small red onion (sliced)
  • 15 oz petite diced tomatoes
  • 4 oz diced green chilies
  • 1 oz fajita seasoning

Instructions

  • Add all ingredients to slow cooker then mix. Cook on high for 4-5 hours or low for 6-7. Once cooked through shred chicken and mix all ingredients together well. 
  • Serve with flour tortillas, shredded lettuce, salsa, sour cream, and shredded cheese.

Notes

Tip: Many people ask if it is ok to cook raw chicken in a slow cooker. It is totally OK to do this. Just make sure the internal temperature of the chicken is 165 degrees of greater.
