- 16 oz salsa (1 jar)
- 1 cup brown sugar
- 3-4 pounds boneless pork shoulder (pork butt)
Place the pork shoulder in the slow cooker.
Rub the brown sugar all over the pork, then pour the salsa over the top.
Cover and cook on LOW for 8 to 10 hours, until the pork is tender and falls apart easily.
Remove the pork and shred with two forks. Return it to the slow cooker and stir into the juices.
Serve over rice or in tortillas.
- Pork shoulder is the best cut here. Lean cuts like loin or tenderloin will dry out.
- Pick your salsa heat level based on your family. Mild keeps it sweet and kid-friendly.
- Bone-in pork works but will need more time. Cook until it shreds easily.
- Don't drain the juices. Shredding the pork back into them keeps it moist and flavorful.
- Leftovers keep for 4 days in the fridge or 3 months in the freezer. Store with some of the juices.
