Ingredients

Chicken:

  • 3 lb boneless skinless chicken breast
  • ½ cup chicken broth
  • cup plus 2 tablespoons hoisin sauce
  • 3 tablespoons ketchup
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 tbsp minced garlic
  • 1 teaspoon red pepper flakes
  • 1 tablespoon ground ginger
  • 2 teaspoons toasted sesame oil
  • buns for serving

Coleslaw:

  • 4 cups coleslaw mix
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon red pepper flakes

Instructions

  • Place chicken in the slow cooker. Add the remainder of the ingredients to the slow cooker.
  • Cook in low for 6 hours or on high for 4. Once cooked shredded in the slow cooker.
  • To prepare coleslaw place coleslaw mix in a mixing bowl.
  • In a separate bowl whisk together sugar with sesame oil and red pepper flakes. Pour over coleslaw mix and toss to coat.
  • Serve shredded chicken on buns with coleslaw. (tips for a creamy sauce add mayo)

Notes

  • Tip: This coleslaw goes great with the flavors of this sandwich. You can add salt and pepper to taste. For a creamy coleslaw instead of oil base try using mayonnaise or greek yogurt.
