- 1 cup Rolled oats
- 2 2/3 cups Flour
- 1/3 cup Sugar
- 1/3 cup Brown sugar
- 2 tablespoons Baking powder
- 1/2 teaspoon Salt
- 2 teaspoon Ground cinnamon
- 1/4 teaspoon Ground nutmeg
- 2 Eggs
- 1/2 cup Vegetable oil
- 1 1/2 cups Milk
- 1 1/2 cup Chocolate chips
- 1 cup Walnuts (chopped)
Preheat oven to 400 degrees. Prepare a muffin tin with non stick cooking spray or muffin tin liners.
Whisk together oats, flour, sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg in a large mixing bowl. In a separate bowl beat eggs then add it to dry ingredients.
Add milk and oil to the large mixing bowl with ingredients and mix until combined. Fold in crushed walnuts. Let sit 30-35 minutes to allow oats to soften.
Spoon dough into each muffin tin about 3/4 way full. Bake for 17-18 minutes or until muffins are cooked though and a toothpick can come out clean.
