Walnut Oatmeal Spice Muffins

Muffins make the perfect breakfast. As you know by now I’m not a big morning person so making muffins ahead of time is perfect for me. It started with my mini sausage pancake muffins and then I just started a muffin kick and have been making them none stop! These Walnut Oatmeal Spice Muffins are some of my favorite and so full of flavor. Cut one in half with a big slab of butter and a hot cup of coffee on the side. Sounds like the perfect morning. 

Walnut Oatmeal Spice Muffins Instructions:

Preheat oven to 400 degrees. Prepare a muffin tin with non stick cooking spray or muffin tin liners. Whisk together oats, flour, sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg in a large mixing bowl. In a separate bowl beat eggs then add it to dry ingredients. Add milk and oil to the large mixing bowl with ingredients and mix until combined. Fold in crushed walnuts. Let sit 30-35 minutes to allow oats to soften. Spoon dough into each muffin tin about 3/4 way full. Bake for 17-18 minutes or until muffins are cooked though and a toothpick can come out clean.

Cooking Tip:

When cooking with oatmeal your muffins could end up a little dry. I find that letting your oats sit in the mix to soften and soak really helps them to be more moist after cooking. Just cover with plastic wrap and set aside for at least 30 minutes then bake.

Ingredients 

  • 1 cup Rolled oats
  • 2 2/3 cups Flour
  • 1/3 cup Sugar
  • 1/3 cup Brown sugar

  1. Tried it this morning and it is FAB! Brought to a meeting and everyone thoroughly enjoyed and said they were great. Did not have Choc chips so chopped up a dark choc candy bar and also toasted the walnuts before adding. (Added both of those at the end – not while it sat) The instructions left off the choc chips.
