Chicken Stuffing Casserole

- 6 oz box chicken stuffing (1 box)
- 1 pound chicken breast (boneless and skinless)
- 1/2 pound frozen broccoli
- 1/4 cup milk
- 10.5 oz can cream of chicken soup (1 can)
- salt and pepper (to taste)
- 1/2 cup mozzarella cheese (shredded)
Cook stuffing according to package directions and set aside.
Preheat oven to 400 degrees F. Prepare a casserole dish with non-stick cooking spray and set aside.
Dice chicken into bite-size pieces and place in a large skillet. Cook on medium/high heat until cooked through.
In a large mixing bowl mix cooked chicken with frozen broccoli with milk and can cream of chicken soup. Season with salt and pepper to taste. Once mixed place in your prepared casserole dish.
Add shredded mozzarella cheese to the top then the prepared stuffing.
Bake for 15-20 minutes then serve and enjoy.
Tip: For this recipe, I used a 2-quart casserole dish.
