Slow Cooker Marry Me Chicken

Ingredients

  • 2 Pounds Chicken Breast 3-4 pieces
  • Salt and Pepper to Taste
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • 1 Teaspoon Italian Seasoning
  • ¼ Teaspoon Red Pepper Flakes
  • 3 Teaspoons Garlic Minced
  • Cup Sundried Tomatoes Rough Chopped
  • ½ Cup Chicken Broth
  • 1 Tablespoon Cornstarch
  • 2 Tablespoons Water
  • 1 Cup Heavy Cream
  • ½ Cup Parmasan Grated
  • ¼ Cup Fresh Basil Chopped

Instructions

  • Sprinkle chicken, on all sides, with salt and pepper to taste.
  • Melt butter and olive oil in a pan over medium high heat. Brown the chicken for about two minutes on each side then place chicken into the slow cooker.
  • Sprinkle Italian seasoning and red pepper flakes over chicken in the slow cooker. Add garlic, sundried tomatoes, and broth to the top of your chicken.
  • Place the lid on the slow cooker and cook on low for 3-4 hours or high for 1.5 to 2 hours
  • Just before cooking is complete remove the chicken from the slow cooker. Stir the water and cornstarch together to make a slurry, then add it to the slow cooker along with the heavy cream and parmesan cheese; stir until well mixed.
  • Return the chicken to the slow cooker and cook on high for another 10-15 minutes.
  • When the sauce is thickened, sprinkle with basil (optional) and serve.

How to store this chicken:
This chicken needs to be stored in the refrigerator in an air-tight container. It will last up to 5 days. Store it with the sauce from the slow cooker.
To reheat, add to a pan on the stovetop and heat it over medium heat until it is hot.
